Ingredients:
6 medium sized eggplant
2 cans/jars of water based tuna
2 eggs
Salt to taste
Olive oil to drizzle
3 – 4 minced garlic cloves
Chili flakes (if desired)
2 tsp dried Italian seasoning herbs
1 handful of parmesan & seasoned breadcrumbs
I know it sounds so Italian to say a “handful”…hahahahaha…that’
Wash & cut the eggplant in half. Then slice the eggplant in cubes, place all cubed eggplant in a bowl & with salt, chili flakes, dried Italian herbs & coat with olive oil.
Heat oven at 350 degrees.
Roast the eggplant in the eggplant peel or in a roasting pan for approximately 60 minutes.
Let cool.
Place eggplant cubes in blender to mince and then combine with the rest of the ingredients.
Mix all together and then form your burgers.
They can be lightly fried or bake for 20 minutes.
