I love making homemade pizza….it’s a production in my home. This past weekend I had a pizza party for my daughters birthday….I made 10 different types. I’ve decided to share my pizza secret with you all…HAHAHAHA.
I always like to think I’m a chef….. we all can dream, can’t we? But, before I tell you, let me tell you that when my father in law & I decide to make pizza together, it turns into a comedy show! He’s never shy to say that, “I don’t know what I’m doing” – friendly banter!”. He definitely “eats” his words when he bites into one of my pizzas. I have definitely secured a place in the family. I also get a bit “obsessive” with the ingredients & which company they come from, such as when I use pesto it can only be from Pastene, I use only prosciutto cotto from Italy. Prior to me purchasing prosciutto crudo, I always have the deli person slice me one slice so I can make sure it’s not salty. My sister always comments that I act like an “old Italian lady” at the supermarket. Once I’ve gathered up all the ingredients it’s time to “create.”
I heat up the oven to the highest temperature. I allow the dough to rise on a floured surface. I don’t over stimulate the dough. Secret # 1 – I spread the dough as thin as I can & I top it with tomato sauce or extra virgin olive oil. I cook this first for approximately 3-4 min. Secret #2 – I add the cheese & toppings and pop it back in the oven for approximately 2-4 minutes, once the cheese is melted. The idea of doing this is so that the ingredients don’t get over cooked & always look appetizing.
